Name : Dry White Wine: Tsinandali

Vineyard : Tsinandali is grown in a specific zone of one of the traditional, high quality winemaking regions and is one of the best-known names in Georgian dry white wines. The high quality of wine in the Tsinandali micro-zone is conditioned by the carbonate soils and the microclimate that dominates in this zone. These conditions help preserve the acidity even after the grape has ripened, which is essential when making high-quality white wines. The grapes in this zone are quite ripe, which is an important quality for this particular wine and allows a higher extraction level.

 

Vintage : Once the grapes are ripe, the healthy bunches are selectively picked by hand; this takes place at the beginning of October.

 

Harvest : 10 ton on hectare

 

Technology : The entire bunch is pressed as tenderly as possible, after which the self-flown (Tvitnadeni) fraction of the must is selected. These fractions are then used to make Tsinandali. After treating and cleaning the must, the alcoholic fermentation takes place, which occurs at 17-19° C, under the strict control. Wine aged in oak barrels minimum 6 month.

 

Characterization : Tsinandali is one of the best-known Georgian dry white wines. The wine has a lovely straw color, with expressive and developed bouquet of ripe apples, vanilla and peaches. Tsinandali has a harmonious taste and comes with long pleasant taste.

 

Recommendation  : The optimal temperature for drinking is 14-16° C.

 The wine has a strong aroma which pairs well with white meat and fish.

Name  : Red Semi-Dry Wine: Phirosmani

 

Vine sort : 100% Saperavi

 

Vine Age : 10-12 years

 

Vineyard : Phirosmani is grown in companies own vineyards, which are spread on the left bank of the Duruji River. Duruji river and the Caucasus mountain makes unique microclimate that allows the grapes to ripen perfectly with a high amount of sugar, which is one of the most important conditions when making a high-quality, semi-dry wine.

 

Vintage : Once the grapes are ripe, they are selectively picked by hand (only the healthy bunches); this takes place at the end of September.

 

Harvest : 8ton on hectare

 

Technology : After the stems are removed and the grapes are pressed, one part of the must is selected and set aside. The remaining sediment goes through controlled alcoholic fermentation during 5-6 days, before bottling previously selected must is added back into the wine.

 

Characterization : “Phirosmani “boasts a lovely pomegranate color and a pleasant aroma. It has a sweet taste that balances agreeably with the phenols and acidity, and matches perfectly with its delicate aroma.

 

Recommendation: The optimal temperature for drinking is 15-17° C.

“Phirosmani” goes well with spicy and flavorful dishes, specifically Asian cuisine. It can also be served with dessert.

Vineyard : Mtsvane is produced in the company's own vineyards, which are located in specific zones of Kvareli and Kindzmarauli, where traditionally high quality wines are produced. The high quality of the wine is due to the soils rich in alluvial and black shale’s and the positive effect of the Caucasus ridge.

Vintage : Selective picking of grapes (only healthy bunches of grapes) takes place at the beginning of October, when the grapes are physiologically ripe.

 

Harvest : 8 ton on hectare

Technology  : Stems are removed from the grapes and the crushing takes place. After that the freely flowing fraction of the must is separated. After processing and cleaning of the must, its alcoholic fermentation occurs at the temperature of 14-16° degrees under strict surveillance. When the remaining sugar in the fermented wine reaches 15 grams per litre, the fermented mass is quickly chilled on -2° degree, thus stopping alcoholic fermentation. Before bottling this wine is preserved at the indicated temperature and then is poured into the sterilized bottles. 

Description : The wine is light straw-coloured, with well-expressed, developed aroma of ripe fruit with domination of the peach tones. The taste of the wine is lively, soft and harmonic.

Recommendation : Optimal temperature for wine serving 12-14°.

Recommended to serve with pasta and fresh cheese.

The optional temperature for drinking is 14-16° C. The wine pairs well with fish and mushrooms.

The wine is optimal to be served with white meat, fish and vegetable dishes, which show the best characteristics of the dishes well.
